The beauty of traditional food lies in two things; its ingenious use of locally available ingredients and the cultural context. Food, I think, is the soul of a culture. The best interactions with culture and people are done over a glass of drink or a social meal. I am getting all poetic because I read Daniel Roy's backpackfoodie today. It is the most awesome blog I have ever come across. On that note, look at this.

This thing, which looks like a lemon ballooned out of size, is a Key Lime. In places with dry, cold winter like the middle hills of Himachal, citrus fruits come in various shapes and sizes. Apart from the more common lemon and orange (which mostly do not grow here), locally you find Key Lime, Pomelo and Pseudo Limon. Out of these and a few spices, the natives of the region found a way to make a simple yet delicious snack called Khatta.
